Duck Confit, or 'Confit de Canard', is a centuries-old dish that hails from the Gascony region of France. It is a testament to the ingenuity of French cuisine, transforming a simple ingredient through time-honored techniques into a dish that is nothing short of a culinary classic. At our bistro, we stay true to the traditional preparation method. The duck legs are generously seasoned with a blend of fresh herbs, aromatic garlic, and coarse sea salt. This mixture is allowed to permeate the meat for at least 24 hours, a process known as 'curing'.
